French Beans cooked in Olive Oil (Zeytinyagli Aysekadin Fasulye)
- generous 0.5 cup olive oil
- 1 large fresh tomato, skinned and chopped
- chopped fresh parsley, to garnish
- 1 onion, chopped
- 1 Tbsp tomato paste
- 1 lb French beans, trimmed
- salt and ground black pepper
How to do it!
Heat the oil in a skillet and fry the onions until transparent, then add the beans, and fry together for a few minutes.
Cover with cold water, then add the chopped tomato. Bring to a boil and stir in the tomato paste, then reduce the heat, and simmer for 20 minutes, or until the beans are cooked. Drain, retaining about 1 tablespoon of the cooking juice.
Transfer the beans to a glass dish and add the retained juice. Season to taste. Chill before serving, garnished with parsley.
