White Kidney Beans in Olive Oil (Fasulye Pilakisi)

  • 2 cups dry kidney beans
  • 1.25 cup olive oil
  • 1 large yellow potato, diced
  • 1 large carrot, sliced thinly
  • 1 large onion, chopped
  • 5 cloves garlic, sliced
  • 0.25 teaspoon sugar
  • 4 cups water
  • 2 teaspoons salt
  • Parsley for garnish

How to do it!

 

Soak beans over night. Drain and add fresh water to cover, bring to a boil and simmer for about 20 minutes. Beans will be slightly cooked.

Meanwhile in another large pan, sauté the chopped onions in 1.25 cup olive oil until onions change colour. Add slightly cooked beans, 4 cups water, sliced carrots, diced potato, garlic, sugar and salt.

Cover pan, bring to a boil, lower heat and simmer until beans are soft. Allow to cool in pan. When cool, put in a large serving dish, sprinkle with chopped parsley and serve cold.
