Ladies Thigh Burgers´

How to do it!
Place two?thirds of the ground meat, the onion, and butter in a skillet and cook until the meat absorbs its own juice.
Wash the rice and boil in plenty of water until soft. Drain and set aside.

Combine the cooked meat mixture with the remaining raw meat and add the drained rice, parsley, three of the eggs, and salt and pepper. Knead thoroughly, break into pieces the size of a half lemon, and press into an oval shape. Place on a plate, covering each one with bread crumbs.



Whisk the remaining eggs in a bowl big enough to dip the burgers into. Heat some oil in a skillet and, when hot, dip each burger in the egg then fry on both sides until cooked through.

* 1 lb medium lean ground lamb or beef
* generous 0.25 cup long grain rice
* salt and ground black pepper
* 1 onion, chopped fine
* 1 tablespoon chopped fresh parsley
* 1 tablespoon bread crumbs
* 1 tablespoon butter
* 5 eggs
* olive oil, for shallow frying
